This is an absolutely delicious, fresh alternative to traditional pasta or potato salads that are always overdone at grill-out gatherings.
1. In a large bowl, combine red and yellow tomatoes, avocado, cucumber, red onion, and mozzarella balls.
2. Toss ingredients with basil pesto, lemon juice, and salt and pepper. Adjust according to taste.
3. Make close to serving time, as avocados will oxidize and turn brown.
