Mini pizzas are always a win, no matter what. After the party, this can also be a go-to recipe for after-school snacks for the kiddos.
1. Preheat oven to 375 degrees. Grease a 12-cup (or 24-cup mini) muffin pan.
2. In a large bowl, whisk together the flour and baking powder. Whisk in the milk and the egg. Stir in the salt, garlic powder mozzarella and desired toppings; let stand 10 minutes.
3. Stir the batter and divide among the muffin cups. Bake until puffed and golden, about 20-25 minutes.
4. Serve the puffs with pizza sauce or Ranch for dipping.
