With no flour, sugar, or eggs, these hearty oat and chocolate chip cookies make a quick breakfast or a delicious, guilt-free snack.
1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper, or spray with nonstick cooking spray. Set aside.
2. In a large bowl, combine oats, cinnamon, and salt. Add mashed banana, applesauce, and vanilla. Stir to combine.
3. Fold in pecans, coconut, and chocolate chips. Using your hands, press together dough balls, place them on pan, and slightly press to flatten. Add a bit of oil to your hands if dough sticks to them.
4. Bake 12-14 minutes, or until firm and golden brown. Remove from oven and let them continue to cook slightly on baking sheet for five minutes, then cool fully on a cooling rack.
