Ingredients
  • 8 ounces cream cheese, softened
  • 2 ½ cups sharp cheddar cheese, grated
  • 1 tsp Dijon mustard
  • 2 Tbsp. half-and-half
  • ¼ cup Guinness beer
  • 2 or 3 scallions, chopped
  • 1 tsp garlic, minced
  • 2 Tbsp. parsley, chopped
  • Sea salt and pepper, to taste

Guinness and Cheddar Dip

For a day that’s known for its Irish drinks and pub indulgences, there’s no better pairing than the top favorites of beer and cheese. So, grab some pretzels or settle for your fingers, because this dip is to dive for.

How to Make

1. In food processor, combine cream cheese, cheddar, mustard, and half-and-half. Pulse until smooth.

2. Add in Guinness. Pulse to combine.

3. Add the scallions, garlic, parsley, salt and pepper. Blend.

4. Transfer to a bowl, cover, and chill one hour before serving.
