This soup is so warming and deliciously satisfying that it’s likely to become a weekly staple in your household during the cooler months.
1. In a large heavy-bottomed pot, warm the olive oil. Add diced onion and let sauté until softened, about five to seven minutes.
2. Add garlic and stir in until fragrant, about 30 seconds. Crumble ground turkey into the pot and let it cook through.
3. Stir in crushed tomatoes, chicken broth, basil, bay leaf, salt and pepper. Bring to a boil, then reduce heat to low. Cover and let simmer for 20-30 minutes.
4. Add in tortellini and spinach and let simmer for five to seven more minutes until tortellini is tender. Remove from heat and serve.
